portuguese chicken recipe

it has been quite a long time since i last made portuguese chicken as i was lazy to cook & mama kind of stop eating chicken at home for quite some time.... anyway back to the recipe... i dont think this is the authentic portuguese chicken that you can find in restaurant but the recipe was taught to me by my grandma & my family love to eat it.... is actually quite simple but just need to keep track as coconut milk is involved so need to stir occasionally to avoid chao da

ingredients:
chicken                         approx 1kg
(can be any chicken parts; wings, drumlets, drumstick, breast meat... any parts that you like but personally i prefer chicken wings)
carrots                          3 pieces
potato                          3 medium size (length about 7cm kind)
onion                            1 BIG size
coconut milk                 400mL
seasoning = salt, sugar, soya sauce & potato starch)     agar agar
(i dont really measure like an exact amount, just based on experience)

Steps:
1: washed & de-skin the chicken or any excess fats... the fats part is optional but i prefer my meat to be lean
2: blench the chicken in boiling water for approx 2min, drain and rinse with water... this step is to remove any dirty stuff on the chicken & also get rid some of the bird taste on the meat
3: marinate the chicken, amount is agar agar... but roughly for 1kg of meat, i used about 3tbsp of soya sauce (till all the chicken has a light brown coating), salt 2tsp, sugar 2tsp, potato starch 1tbsp.... marinate for at least 1hr in the fridge.... is ok if overnight
4. cut the carrots & potatoes into cubes, dont need to be particular about the sizes, just cut into small pieces.... onions will be in thin slices, this will add to the sweetness
5. heat up the pan/wok with about 2tbsp of oil, add in onion, cook till light brown then add carrots & potatoes, followed by marinated chicken
6: add coconut milk & approx 1 cup of water & let it simmer for at least 15min, stir occassionally
in the process of cooking...
7: let the sauce reduce to slightly thick, make sure the chicken is cooked then add in salt + sugar... have to sample the sauce to gauge how sweet you want the suace to be
final product
i think the authentic portuguese chicken will be baked but that's too time consuming for me so i dont use that method... i felt simmering it will be equally nice =)
