Ingredients: (make about 1 dozen dorayaki)
300g pancake flour
red bean paste
6 eggs
6tbsp honey
2tbsp sugar (optional)
200mL milk

Steps:
liquid mixture with sifted flour |
mix everything together |
smooth batter |
so when you are mixing the batter, sometimes you might notice lumps of
flour being formed... that's normal, just continue to fold then the
batter will become smooth
2. oil the pan, MUST be non-stick kind of pan... there is an important trick in frying dorayaki = DONT use too much oil..... another thing is use a flat pan (i will elaborate in the next step)

you want to just lightly grease the pan cause excess oil will end up deep frying the batter... you want a fluffy chewy pancake, not a crispy waffle
3. add in the batter... for 1 medium size pancake is about 1.5tbsp of batter

you can see in this picture the importance of using a flat based frying pan... cause i am not using any mold for my dorayaki, the batter can slide around if the pan isnt flat bottom... you will end up having a merged pancake....
4. let the batter bubble

batter will start to bubble after about 30sec but DONT flip over yet cause the pancake isnt cook through yet, so you wont get this golden brown colour

this is what you get when you flip the pancake over too early... of cause if you prefer light brown pancake then that's fine too....

but normally i will wait till bubbles are formed throughout the pancake, this is take approximately 2 min.... then i flip over

tada... golden brown.... ok, the degree of brown-ness is subjective, i dont want really brown pancake so this is good enough for me.... so after flipping over, cook for another 30sec or so till the pancake is thoroughly cooked

5. cool down the pancake..... i will put aside the pancake for awhile before putting in the filling

you put the filling in the pancake, abit more in the center so that the pancake will have this puffy look....

tada.... there is your dorayaki!!! looking good right??? it's pretty simple so you guys can probably try out over the long weekend =)
