dorayaki recipe

made some dorayaki over the last weekend so just to share the recipe....

Ingredients: (make about 1 dozen dorayaki)

300g pancake flour
red bean paste
6 eggs
6tbsp honey
2tbsp sugar (optional)
200mL milk

pancake flour from Daiso

red bean paste from phoon huat
gotten my pancake flour from daiso, i think most brands are fine since the ingredients are more or less the same.... for the red bean paste, wanted to buy from Daiso but couldnt find it on that day so i bought it from phoon huat instead.... of cause not as nice as those you get from the store since phoon huat red bean paste is all blended so you wont get the individual beans.... but taste i think is still ok la....

Steps:
1) mix the liquid ingredients together first followed by sifting in the flour

liquid mixture with sifted flour

mix everything together

smooth batter

so when you are mixing the batter, sometimes you might notice lumps of flour being formed... that's normal, just continue to fold then the batter will become smooth

2. oil the pan, MUST be non-stick kind of pan... there is an important trick in frying dorayaki = DONT use too much oil..... another thing is  use a flat pan (i will elaborate in the next step)
add oil into the pan

wipe the oil with kitchen towel

lightly grease pan
you want to just lightly grease the pan cause excess oil will end up deep frying the batter... you want a fluffy chewy pancake, not a crispy waffle

3. add in the batter... for 1 medium size pancake is about 1.5tbsp of batter
merged pancake
you can see in this picture the importance of using a flat based frying pan... cause i am not using any mold for my dorayaki, the batter can slide around if the pan isnt flat bottom... you will end up having a merged pancake....

4. let the batter bubble
start bubbling
batter will start to bubble after about 30sec but DONT flip over yet cause the pancake isnt cook through yet, so you wont get this golden brown colour

slightly undercook pancake
this is what you get when you flip the pancake over too early... of cause if you prefer light brown pancake then that's fine too....

bubble throughout the pancake
but normally i will wait till bubbles are formed throughout the pancake, this is take approximately 2 min.... then i flip over
golden brown pancake
tada... golden brown.... ok, the degree of brown-ness is subjective, i dont want really brown pancake so this is good enough for me.... so after flipping over, cook for another 30sec or so till the pancake is thoroughly cooked

bear head pancake
so you can be creative and do different kind of pancakes instead of the conventional round shape... hubby join in the fun and made this bear head pancake, so cute =)

5. cool down the pancake..... i will put aside the pancake for awhile before putting in the filling
generous filling
you put the filling in the pancake, abit more in the center so that the pancake will have this puffy look....

cover with another pancake
final product
tada.... there is your dorayaki!!! looking good right??? it's pretty simple so you guys can probably try out over the long weekend =)
