rocky road fudge

as mentioned in my previous post about the strawberry and rocky road fudge recipe, i went to try it yesterday to prepare for this year valentine's day gift.... i made some slight adjustment to the online recipes & i will share my version below...

ingredients:
500g of milk chocolate chips
250g of dark (55%) chocolate chips
4 tbsp peanut butter
200g mini marshmallow
200g chopped almonds or any kind of nuts that you like

these are all the ingredients that you will need... for this amount, you can make like 4 boxes (those rectangular plastic container used to take away food) i bought my ingredients from phoon huat but only after that i realised NTUC sell other brands of chocolate chips at same price... sian.... but luckily this bakeway chocolate tasted nice....

Steps:

1: first line your tray with baking sheet.... i used a large rectangular tray, i think about 8"x 12" &  my chocolate were like slightly smaller than an inch thick

2. mix all the chocolate chips and peanut butter in a large bowl.....for the recipes online, they use semi-sweet & milk chocolate... but phoon huat doesnt sell semi-sweet one so i change to 2 packet of milk & 1 packet of dark since i dont want the chocolate to be too sweet...

3. melt the chocolate + peanut butter mixture.... here is the VERY VERY VERY IMPORTANT step & i kind of screw up mine.... there are 2 ways to melt your chocolate, either using a double boiler or microwave.... this page show you how to do it..... i used the microwave method & the recipe site didnt mention the power used to melt chocolate... so stupid me went to use high power... the chocolate did melt quickly but at the same time, they thicken & became pasty!!!!

at first i thought the phoon huat chocolate too cheapo, so will become pasty after heating but apparently i overheat my chocolate =( i made the common chocolate mistakes!!!! never NEVER use high or direct heat to melt chocolate!!! i only found that out after i finished making the fudge.... this site say that you can save your pasty chocolate by adding a little bit of water... so please remember to melt the chocolate in LOW power & stir constantly!!!

4. add marshmallow & nuts into the melted chocolate mixture....

5. spread the mixture on the tray
you can see mine chocolate was kind of lumpy & didnt cover the marshmallow well.... can you imagine how devastated i was when i spread out the fudge!?!?!? i was like all anticipating the molten chocolate & spread the fudge nicely on the tray but i couldnt =( but anyhow, after that you put the fudge in the fridge to chill it down for a couple of hours

actually the final product didnt look as bad as i imagined!!! & when i gave them to my lab people, all of them said the fudge was AWESOME!!! yeah =) at least it tasted better than it look =) so girls & boys, do try out this recipe... really simple & fast, still have time to buy ingredients  & make it in the morning before giving them to your valentine... BUT just remember to melt the chocolate under low heat.....

to end off the post, let me share the beautiful bouquet that hubby gotten me... i was really surprised that he will buy me a bouquet... i was expecting like afew stalks since there isnt any florist in school.... probably gotten it from the NUH florist... but yeah... happy =)
